Basic Bone Broth

Broth is the basis for so many things – soup, gravy, stew – and of course there aren’t any out there that I have found commercially that don’t have sulfites. On the upside, broth (or stock) is very easy to make and does not take much prep time. It cooks for quite some time, but all you have to do is add more water occasionally and skim off the frothy stuff that forms on the top. I do both chicken and beef/lamb broth in big batches on the weekend and freeze them in individual containers for later use. I will list them both here as the basic recipe is the same with only minor tweaks.

Chicken

Take the carcass of a whole chicken that you have roasted and removed the meat from. Put in a large pot. Fill the pot with water. Bring to a boil, then reduce to a simmer. Cook for 12 hours, occasionally skimming any “scum” that forms on the top off. Refill if liquid boils down to far with a little more water. Salt to taste. Remove bones and strain liquid, discarding all solids.

Beef/Lamb

Use bones that have been grilled or roasted. Put the bones in a large pot. Fill the pot with water. Bring to a boil, then reduce to a simmer. Cook for 24 hours, occasionally skimming any “scum” that forms on the top off. Refill if liquid boils down to far with a little more water. Salt to taste. Remove bones and strain liquid, discarding all solids.

That is pretty much it. If you can tolerate it, you can add a Tablespoon of apple cider vinegar or fresh squeezed lemon juice to draw out more minerals from the bones. I know some people put some veggies in for added flavor and if you want to add some carrots or other root veggies, that is fine, but I like mine plain because I don’t know what I am going to make with the broth later and so I flavor it when I am cooking with it. Some people don’t even do the salt, and add salt later when they are cooking whatever they are going to make out of the broth, but I already know that WHATEVER I make I am going to add salt to, so I go ahead and add it up front. your call on whether you want it in there or not.
